Tsukemono (Pickled Cabbage)

There are quite a bit of ingredient options for making tsukemono.  I personally like using vegetables like cabbage, napa cabbage, cucumbers, eggplants, daikon radish, turnips, gobo (burdock root), carrots, ginger and more.
