Asparagus With Minced Mushroom Sauce

Whenever asparagus and mushrooms come together, the resulting dish can only be a
success. Fresh asparagus is grilled in a pan and then combined with a savory mushroom mince seasoned lightly with salt, pepper, and sautéed onions. Top this with herbs for a bit of freshness, add a side of grains and dig into this delicious, light, and simple dish.

ASPARAGUS WITH MINCED MUSHROOM SAUCE [VEGAN]

INGREDIENTS

  • 1/4 cup olive oil
  • 1/2 onion, chopped
  • 1/2 cup chopped Baby Bella mushroom
  • 7 chopped White Button mushrooms
  • 2 garlic cloves, minced
  • 1 tablespoon vinegar
  • 2/3 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon olive oil
  • 2 bunches of green asparagus, trimmed at the base
  • Fresh parsley, for serving

PREPARATION

  1. Heat oil in a skillet over medium heat. Sauté the onion in olive oil for 5 minutes, until softened.
  2. Add brown mushrooms and white mushrooms in the pan, cooking for another 3-4 minutes. Season with garlic, vinegar, salt, and pepper. Cook for a few minutes and set aside in a bowl.
  3. Heat a tablespoon of oil in a skillet.
  4. Add the asparagus and cook them for a minute on each side, just to gain some grilling marks.
  5. Arrange the asparagus on a platter and pour over the hot mushroom sauce.
  6. Sprinkle with chopped parsley before serving.
