This vibrant side dish was inspired by a craving for coconut rice, but is a bit more on the sweeter side and has a pop of color. It's sweet and sticky, as coconut rice should be, with a bit of fruity flavor from the dragonfruit. Serve topped with black sesame seeds, an additional squeeze of lime juice, and sliced avocado.
VIBRANT DRAGONFRUIT COCONUT RICE [VEGAN]
INGREDIENTS
- 3/4 can coconut milk
- 1 teaspoon sea salt
- 2 cups jasmine rice
- 1/2 cup pineapple juice
- 2 cup water
- 1/2 packet defrosted pink dragonfruit
- 1/2 squeeze lime
- Avocado and black sesame seeds, for garnish (optional)
PREPARATION
- In a bowl combine the coconut milk, lime, pineapple juice, and sea salt. If you don’t have pineapple juice simply press the fresh pineapple through a sieve and extract the juice.
- In a pot over high heat add 2 cups of water and the pineapple coconut mixture. Once boiling add rice, then reduce to a simmer leaving the lid on top. Leave covered without peaking, and then gently fluff with a fork and toss in the room temperature pink dragonfruit. Top with a fresh squeeze of lime. (For more of a pink color, toss in additional defrosted pink dragonfruit.)
