prepare. The onions are battered in a light savory mixture of quinoa and bran cereal and then baked. Then, you have some delicious miso gravy for dipping that puts this recipe over the top.Baked Onion Rings With Miso Gravy [Vegan]
Ingredients
For the Onion Rings (serves 2):
- 1 large white onion, sliced
- 1 cup bran cereal
- 1/2 cup puffed quinoa (optional)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- A pinch of black pepper
- 1/2-1 cup liquid egg substitute (2 tablespoon ground flax seed, plus 8 tablespoons water)
For the Gravy:
- 2 tablespoon spelt flour
- 1/8-1/4 teaspoon garlic powder
- 1/4 cup plus 2 tablespoons nutritional yeast
- 3/4 cup vegetable stock
- 1 tablespoon sunflower oil (can substitute with canola or other mild tasting oil)
- 1 teaspoon Dijon mustard
- 1 1/2 tablespoons white miso paste
- 1/4 teaspoon salt
Preparation
To Make the Onion Rings:
- Combine flax eggs and water and set aside to become "eggy" (5-10 minutes)
- Grind the bran cereal in a food processor until nice and crumbly, but not yet a flour.
- Transfer it to a shallow dish and stir in quinoa puffs and all your seasonings.
- Pour egg replacer into a shallow dish.
- Submerge each onion ring into the 'egg' bath and then dunk into cereal mixture, moving around to coat them completely.
- Bake on a lightly greased or parchment-lined baking sheet at 375°F for 20-25 minutes until the outsides are crispy and golden.
- Serve with miso gravy
To Make the Gravy:
- Combine your flour, garlic powder, yeast, and stock in a small pot over low heat.
- Whisk it to make a thin paste.
- Bring it to boil, turn down the heat and let it simmer for 1 minute.
- Add the oil, mustard, miso, and salt.
- Whisk the mixture until everything is combined and smooth. Do not let mixture boil once miso is added. If it's too thick, add additional water or stock.
