BREAD PUDDING
Ingredients
10cm thick piece of dry bread
200g mixed dried fruit
1 Tbsp brown sugar
Grated
rind of 1/2 lemon
1
1/2 cups of low fat milk
2 eggs
2 tsp mixed
spices
Method
·
Slice
the bread (leave the crusts on) and soak in cold water for half and hour.

Squeeze
the bread with your hands to get as much water out as possible and then beat it
with a fork until it is smooth.

Beat
the egg, add milk and sugar and pour over bread.
·
Transfer
the mixture to a greased casserole dish, smooth it
out on top, and bake it for about 1 1/2
hours in a low medium oven.
·
Serve
hot with yogurt or low fat ice-cream. This is an excellent winter pudding.
