CHOCOLATE PROTEIN MOUSSE [VEGAN]
INGREDIENTS
- 1 10.5-ounce package organic silken tofu
- 1/2 cup good quality vegan dark chocolate
- 1 tablespoon cacao powder
- 4 Medjool dates pitted and soaked in warm water to soften
- 1 tablespoon rice malt syrup or maple syrup
- 1 tablespoon coconut water
- 1/2 teaspoon vanilla bean powder
PREPARATION
- Melt chocolate in a heat-safe bowl. Do this by placing a bowl over a saucepan filled with water over medium-low heat, until all melted.
- Drain the silken tofu and add to the blender along with all remaining ingredients, including the melted chocolate and blend until smooth.
- Pour into separate glasses and set in the refrigerator for at least an hour.
- Top with your favorite toppings, like chocolate shavings, cacao nibs, or buckwheat groats.
