This Rainbow Salad recipe will be your best friend during summer or just whenever you want something light and refreshing, yet filling. It will give your body all the benefits of a wide range of colourful vegetables!
RAINBOW SALAD [VEGAN, RAW]
INGREDIENTS
- 1 lettuce
- 2 tbsp pumpkin seeds
- 2 tbsp hemp seeds
- 2 tbsp goji berries
- 1 tbsp cacao nibs
- 1 carrot
- 1/2 red capsicum
- 1 handful fresh coriander
- 4 leaves of kale (stems off)
- 2 shallots
- 1 avocado
- 1 small cucumber
- 4 tbsp of extra virgin olive oil
- 1/2 lemon juice
PREPARATION
- Wash and cut your veggies.
- Put everything in a salad bowl.
- Add all your nuts, seeds and berries.
- Serve with some extra virgin olive oil (or hempseed oil) and fresh lemon juice.
