DARK CHOCOLATE WHOLE WHEAT BANANA BREAD [VEGAN]
INGREDIENTS
- 1 tablespoon ground flax seeds, plus 3 tablespoons water
- 3 very ripe large bananas, mashed
- 1/3 cup vegan butter or coconut oil, melted and divided
- 3/4 turbinado or raw sugar
- 1 tablespoon vanilla extract
- 1 cup whole wheat pastry flour
- 1/2 cup cocoa powder
- 1 teaspoon baking powder
- 1 teaspoons baking soda
- 1/4 teaspoon cardamom
- 1/4 teaspoon sea salt
- 1 cup dark chocolate
PREPARATION
- Preheat oven to 350°F.
- Grease a medium-sized baking pan with 1 tablespoon of the melted butter or coconut oil.
- Mix the ground flax seed and water in a small cup, set it aside and let mixture thicken for at least 5 minutes.
- Combine the mashed banana and the flax mixture with the remaining melted butter or coconut oil in a large bowl.
- Add the sugar and vanilla extract and mix well to combine.
- Sift the flour and cocoa powder over wet ingredients.
- Add the baking powder, baking soda, cardamom, and salt, and mix it well.
- Stir in the dark chocolate and mix it until the mixture is just combined.
- Pour the batter into prepared baking pan and bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
- Cool in a pan on a wire rack for 5-10 minutes before you run a knife around the edges to pop the bread out.
