If you love roasted red pepper and tomato soup you will LOVE this creamy pasta!
Roasted Red Pepper Pasta [Vegan]
Ingredients
- 3 cups pasta
- 1 red bell pepper
- 1/2 yellow onion
- 3 cloves garlic
- 1/2 cup soaked unsalted cashews
- 3 tablespoons coconut milk
- 1 tablespoon olive oil
- 2 teaspoons tomato paste
- salt and pepper to taste
Preparation
preheat oven to 375ºF
soak your cashews in hot water and set aside
throw your chop the red pepper, onion, and garlic on an oiled pan and once your oven is preheated, throw them in for 20 minutes
boil your water for your pasta while your peppers and onions are cooking
after your veggies are cooked, throw them in a blender with you soaked cashews, coconut milk, olive oil, tomato paste, salt and pepper and blend well
pour over your pasta and enjoy with some nutritional yeast or everything but the bagel on top
