SWEET CURRY POWDER
I’ve become big a fan of sweet curry powder. It’s a fantastic mix of healthy spices:

INGREDIENTS
Sweet Curry Powder
- 1 Tbs. ground cumin
- 1 Tbs. ground Ceylon cinnamon
- 1 Tbs. ground nutmeg
- 1 Tbs. ground cardamon
- 1 Tbs. ground ginger
- 1 Tbs. ground turmeric
- ½ Tbs. ground cloves
- ½ Tbs. fennel seed
Baked Sweet Potato Fries
- 1 large sweet potato (about 2-3 cups of fries)
- ½ Tbs. sweet curry powder
- 1 tsp. olive oil
- ¼ tsp. fine sea salt
INSTRUCTIONS
Sweet Curry Powder
- Combine all curry powder ingredients in a small sealed container and shake to mix.
Baked Sweet Potato Fries
- Preheat oven 400ºF (I use my convection toaster oven. If you are using a conventional oven you may need to adjust baking time.)
- Line a baking sheet with parchment paper.
- Scrub sweet potato and pat dry. Use a sharp knife to slice into ½ inch thick fries. (Leave skin on.)
- Add sweet curry powder, olive oil, sea salt, and fries to a 1-gallon plastic bag. Twist the top closed and shake and massage ingredients until sweet potatoes are evenly coated.
- Arrange sweet potatoes in a single layer on parchment-lined baking sheet.
- Bake sweet potatoes for 15 minutes, turn and continue baking for another 15 minutes or until potatoes are cooked through.
