LEMON CHEESECAKE MOUSSE [VEGAN]
INGREDIENTS
FOR THE BOTTOM:
- 12 vegan graham crackers, crushed
- 1/2 of 1 lemon, juiced
- 2 tablespoons maple syrup
FOR THE MOUSSE:
- 3/4 cup vegan cream cheese
- 1 tablespoon lemon zest
- 1/2 cup cashews
- 1 1/2 lemons, juiced
- 4 tablespoons maple syrup
PREPARATION
TO MAKE THE BOTTOM:
- Combine vegan graham crackers, lemon juice, and maple syrup in a blender or food processor. Pulse into crumbles and transfer them to dessert glasses.
TO MAKE THE MOUSSE:
- Again using a blender or food processor, combine vegan cream cheese, cashews, lemon juice and zest, and maple syrup. Blend until you have smooth cream and smooth it over the bottom. Chill until serving.
