Turkey Seasoning Mix
Apple-Cranberry Compote
Instructions
- Place turkey on a small wire rack inside a shallow baking tray. Line tray with foil or parchment for easier cleanup
- Brush turkey with olive oil or softened ghee.
- Combine turkey seasoning ingredients above and sprinkle over turkey on all sides
- Cook turkey breast uncovered at 325ºF until golden brown and internal temperature reads 165ºF. Cooking times vary – a 2.5 lbs turkey beast should take around 1-1/2 to 2 hours. (If necessary, tent with aluminum foil to prevent scorching)
- Remove from oven, tent loosely with aluminum foil. (Internal temperature should rise to 170ºF in 5 minutes or so.)
- Combine all the compote ingredients together in a medium sauce pan
- When mixture boils, reduce heat to simmer.
- Simmer about 20 - 25 minutes, stirring occasionally. Compote is ready when the apples are tender, cranberries pop open, and mixture starts to thicken.
- Remove from heat, allow to cool a little, and serve warm over sliced turkey
