SWEET POTATO REUBEN SANDWICH [VEGAN]
INGREDIENTS
- Marble rye bread
- Sauerkraut
- Roasted or pan-fried sweet potatoes, greased with coconut oil, cut in rings
- Ketchup
- Vegan mayonnaise
- Vegan swiss cheese sauce (optional)
- Vegan butter
PREPARATION
- In a skillet, place one buttered slice of bread over medium-low heat. In a small bowl, combine ketchup and vegan mayonnaise to your taste.
- On the bread, add a mixture of ketchup and mayonnaise, a layer of roasted or pan-fried sweet potatoes, sauerkraut, cheese, and the remaining slice of bread. Press down with a spatula.
- Grill until the bread is browned and crisped, then turn the sandwich over with the help of the spatula.
