These elegant eggplant fritters are simple to make, ready in a flash, and exceptionally delicious. The tender eggplant is battered in a light gram flour batter and then deep fried until they are soft and creamy on the inside.
Eggplant Fritters [Vegan]
Ingredients
- 4 small eggplants, thinly sliced
- 3 cloves of garlic
- 2 green chilies
- 1 teaspoon salt
- Gram flour
- A pinch of onions seeds (optional)
- Red chili powder, to taste
- Salt to taste
- Oil, for deep frying
Preparation
- Grind the garlic cloves, chilies, and salt together.
- Evenly sprinkle the mixture on the sliced eggplants and let them marinate for 15 minutes.
- In a bowl mix the gram flour and water so there are no lumps.
- Season this with salt.
- Add the red chili powder and the onion seeds to this mixture.
- Heat enough oil in a pan to deep fry the fritters.
- When the oil is hot, dip a slice of marinated eggplant into the gram flour batter and immediately transfer it to the frying pan.
- Fry the fritter over medium heat until they’re crispy and golden brown.
- Serve them immediately with salt and mustard.
