You can cup your hands around this delicious Paleo Caramel Macchiato anytime of the year! The coffee and vegan salted caramel sauce becomes inseparable as they mix together to craft this esteemed, warm beverage. It tastes just like the one you know and love, but better, because it’s completely dairy-free, refined sugar-free, vegan, gluten-free, clean-eating, and guilt-free!
Paleo Caramel Macchiato [Vegan, Gluten-Free]
Ingredients
To Make the Macchiato:
- 8-ounces bold coffee of your choice
- 1/4 cup unsweetened vanilla almond milk, heated
- 2 tablespoons caramel sauce, plus more for drizzling
- 1/8 teaspoon pure vanilla extract
To Make the Sauce:
- 1 can full-fat coconut milk, room temperature and shaken
- 1/2 cup pure maple syrup
- 2 tablespoons monk fruit sweetener (can sub another granulated Paleo sweetener of choice)
- 1 1/2 teaspoon pure vanilla extract
- Pinch of sea salt
Preparation
- OITo Make the Sauce:
- In a large skillet, over medium-high heat, add the coconut milk, maple syrup, and monk fruit sweetener and whisk together.
- Once it boils, turn it down to medium heat so it’s simmering.
- Whisk the caramel about every 3-5 minutes.
- Towards the last 5-10 minutes, you’ll notice that the caramel will turn gold, dark-brown and become thicker, leaving little trails behind when whisking.
- After twenty minutes, take the skillet off the heat and whisk in the vanilla extract and sea salt. Then, pour it into a heat-safe bowl or jar to cool.
To Make the Macchiato:
- Add the two tablespoons of caramel to the bottom of your coffee cup.
- Then, pour the freshly brewed coffee in and stir it.
- Thereafter, pour in the hot almond milk (you can heat the milk over a small saucepan on the stovetop or in the microwave in a heat-safe bowl until it is hot, but not boiling; You don’t want it to burn.)
- Top it off with an additional pour/drizzle of caramel sauce and savor the sinless deliciousness!
