Candied peanuts are a wonderful snack choice, provided you eat a reasonable
portion. Peanuts are full of healthy fats, fiber, and nutrition and are very inexpensive. Note that dry-roasted peanuts contain high-FODMAP additives like onion powder and other seasonings, and will not work for this recipe.Candied Peanuts [Vegan]
Ingredients
- 2 cups (250 g) unsalted roasted peanuts
- 1/3 cup (80 ml) water
- 1 cup (200 g) sugar
- 1 teaspoon flaky sea salt (optional)
Preparation
- Line a baking sheet with wax or parchment paper. Place the peanuts, water, and sugar in a large pan or pot over low heat and cook until the sugar is melted.
- Stir constantly until the mixture thickens into a syrup, adjusting the heat as necessary so that the sugar doesn’t burn; do not let it boil.
- The mixture will begin to change from clear to light amber in about 10 minutes. Be patient—it will happen.
- The liquid will suddenly become thicker and will be almost completely evaporated. At this point, stir until the peanuts are coated and appear glazed, then remove the pan from the heat.
- Sprinkle the salt over the nuts, if using.
- Spread the peanuts on the prepared baking sheet into a single layer, gently separating with two forks, if necessary. When cooled completely, place the nuts in an airtight container, or separate into 1-ounce (28 g) servings and package individually.
Notes
These are very easy to make, but you will need to be patient. The key is to take it slow to avoid burning the sugar.
