These pistachio mousse stuffed pears will make you feel like a professional chef, but they're secretly incredibly easy to make. A mousse made from pistachios and cashews is carefully piped into ripe, halved pears then drizzled with a simple chocolate sauce. PEAR WITH PISTACHIO MOUSSE AND RAW CHOCOLATE SAUCE [VEGAN, GLUTEN-FREE]
INGREDIENTS
FOR THE PEARS:
- 4-5 pears
FOR THE PISTACHIO MOUSSE:
- 1/2 cup pistachio nuts
- 1/2 cup cashews
- 1/3 cup of melted virgin coconut oil
- 2 tablespoons agave syrup
FOR THE CHOCOLATE SAUCE:
- 4 tablespoons coconut oil, melted
- 2 tablespoons maple syrup or other sweetener
- 3 tablespoons raw cocoa powder
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- A pinch of sea salt or Himalayan salt
PREPARATION
TO MAKE THE MOUSSE:
- Soak the nuts in lukewarm water overnight, reserving a few for topping.
- The next day, add the nuts to a high-speed blender, add remaining mousse ingredients, and blend until smooth.
TO MAKE THE CHOCOLATE SAUCE:
- Combine all ingredients until smooth.
TO ASSEMBLE:
- Chop the reserved nuts.
Wash and halve the pears. In each half, pipe or dollop pistachio mousse, pour over chocolate - sauce, and sprinkle with chopped nuts.
