These cookies sandwiches are super easy to make but manage to look fancy all the same. This recipe uses a classic flavor combination, chocolate, and pistachio, to make simple, elegant, and tasty cookies that will have everyone asking for more.
RAW CHOCOLATE PISTACHIO COOKIES [VEGAN, GLUTEN-FREE]
INGREDIENTS
- 1 cup walnuts
- 1/2 cup sunflower seeds, ground
- 1/4 cup, plus 2 tablespoons maple syrup
- 1/3 cup coconut oil, melted
- 2 tablespoons raw cocoa powder
- 1 cup sesame seeds, ground
- 1/2 cup pistachios
PREPARATION
- Add the walnuts, sunflower seeds, 3 tablespoons of maple syrup, and the coconut oil to a food processor and blend them until they are a uniform dough.
- Roll the dough out flat between two pieces of wax paper.
- Use a cookie cutter to cut out the top and bottom parts of the cookie.
- Press chopped pistachios on the tops of these cookies and put them in the freezer to chill for ten minutes.
- To make the chocolate middle, throw the sesame seeds, the cocoa powder and the rest of the maple syrup in the food processor and blend them well.
- Roll the filling out between two sheets of wax paper and use the same cookie cutter to cut out the middles for your cookies.
- Assemble the cookies and put them back in the freezer to chill before serving.
