RAW FIG PISTACHIO BARS [VEGAN, GLUTEN-FREE]
INGREDIENTS
FOR THE CRUST:
- 3/4 cup pistachios
- 3/4 cup raisins
FOR THE FILLING:
- 1 cup raw cashews, soaked overnight, drained and rinsed
- 1/4 cup maple syrup
- 1/2 cup water or non-dairy milk
- 2 tablespoons dark rum (optional)
- 1/4 cup roughly chopped pistachios
FOR THE TOPPING:
- 3 medium figs
PREPARATION
TO MAKE THE CRUST:
- Grind all the crust ingredients in a food processor until you get a sticky paste.
- Line a cake pan with parchment paper and spread the crust on the bottom.
- Place the pan in the freezer while you prepare the filling.
TO MKE THE FILLING:
- Blend all the filling ingredients in a high-speed blender.
- Take the cake pan out of the freezer and add the filling, place back in the freezer.
TO MAKE THE TOPPING:
- Slice the figs and place on the dessert before serving.
