POTATO AND SHRIMP PANCAKES WITH NOPALES

In a bowl mash the potatoes until you get a puree, add the shrimp powder, the cotija cheese, the egg, the ground bread and season with salt and pepper. With the help of a spoon stir until you integrate all the ingredients.
Take a little of the preparation with your hands and form the pancakes, cook in a pan with a little oil for a couple of minutes or until golden brown. Drain on absorbent paper and reserve.
For the green sauce, in a pot with water, boil the tomatoes, onion and chilies for about 10 minutes. Chill slightly and liquefy without liquid until you get a sauce.
In a saucepan, heat the oil over medium heat and fry the sauce. Once the boil cooks for 10 minutes, add the nopales, season and reserve.
On a plate, use the green sauce with nopales and place the pancakes on top. Garnish with fresh coriander leaves and enjoy.
