FISH IN SOY SAUCE WITH GINGER

In a bowl, mix the ginger, garlic, serrano pepper, peppermint, orange juice, soy sauce and pepper. Reservation.
In a pan add the olive oil, the cambric onion, the celery and the sauce that you reserved before, then add the sugar, the lemon zest and cook until it is reduced.
In a pan with oil, seal the fish and season with salt and pepper.
Serve the fish with the glaze, decorate with grilled oranges, chambray onion and roasted cherry tomatoes.
