Ingredients
For the Crust:
- 15 Medjool dates
- 2 cups walnuts
For the Filling:
- 15-ounce pumpkin purée
- 1 1/2 cups walnuts
- 4 ounces vegan cream cheese
- 4 Medjool dates
- 1/2 cup orange juice
- Vegan white chocolate, for garnish
Preparation
- First, make the dough. Combine dates and walnuts in the bowl of a blender or food processor. Pulse until you have a sticky mixture. Prepare a 7-inch springform pan with parchment paper or grease with a little bit coconut oil, then press the date-walnut mix firmly onto the bottom.
- For the filling, combine pumpkin purée, walnuts, vegan cream cheese, orange juice, and dates and process again with the blender or food processor until smooth.
- Finally, put the filling on top of the dough. Garnish with white chocolate shavings. Chill until ready to serve.
