Ingredients
- 2 cups whole wheat pastry flour
- 1 1/2 cups oat flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon sea salt
- 1/4 teaspoon cloves
- 1/4 teaspoon ginger
- 1 cup pumpkin
- 1/2 cup applesauce
- 1/2 cup sugar
- 1/2 cup pure maple syrup
- 1/2 cup olive oil
- 1 tablespoon apple cider vinegar
- 3 cups carrots, grated
- 1/3 cups raisins
Preparation
- Preheat oven to 350°F. Spray 2 loaf pans with cooking spray and set aside.
- In one bowl mix together dry ingredients. In another bowl mix together wet ingredients. Combine the wet and dry ingredients and fold in raisins.
- Transfer batter to loaf pans and bake for 25-35 minutes or until a toothpick inserted comes out clean.
