Simple chicken drumsticks are a fun finger-food addition for autumn. By adding in miso
to the meal it helps to restore beneficial probiotics to the gut and aids in digestion of other foods. We are often asked why miso and tamari are allowed on the Clean Program while other soy products are not. The reason is miso and tamari are fermented, providing health benefits and cutting out the effects of phytic acid. We recommend using organic and non-gmo sources for your miso and chicken. Eat this on its own or pair it with a simple salad.
For Clean Program
Serves: 4
Prep Time: 5 minutes
Cooking Time: 20-25 minutes
Ingredients:
2 pounds chicken drumsticks
1 large sprig of rosemary, roughly chopped
¼ cup miso
2 tablespoons mustard
2 tablespoons apple cider vinegar
2 bunches scallions
3 tablespoons olive oil
a sprinkle of sea salt
Directions:
Preheat the Oven to 350°F. Place the drumsticks in a large bowl then sprinkle in the rosemary. Whisk together the miso, mustard, and apple cider vinegar then pour over the chicken and toss well to coat evenly.
Spread the chicken evenly over a baking dish then bake in the oven for 20-25 minutes. When the chicken is cooked remove from the oven and let rest.
Place the scallions on another baking dish then drizzle with olive oil and sea salt. Turn the oven on broil and cook the scallions until golden brown, just about 3 minutes or so.
Portion out the drumsticks with a few scallions per plate.
