This is a recipe I made pre-children. I used to marinate the steak in vodka and lime before
cooking but I don’t do that these days as obviously it would not be very child friendly! This is a Fresh and Fast Friday Recipe, very quick to make.- Serves: 4
- Preparation time: 15 minutes
- Cook Time: 11 minutes
Ingredients:
Salsa Ingredients:
- 1 avocado diced into small cubes
- 1 punnet of cherry tomatoes diced into small pieces
- 1/2 red onion finely chopped
- 1 red chilli finely chopped (leave out for the kids)
- 1 bunch of coriander – leaves removed and chopped (about 1/2 cup)
- 1/2 capsicum diced into small pieces
- 1 teaspoon olive oil
- sqeeze of lime juice
- salt and pepper
Sauce Ingredients:
- Juice of 1 lime (about 1 tablespoon)
- 4 tablespoons of natural yoghurt
- 1 pack of Tortillas or flat bread wraps of choice
- Rump Steak – 400 grams – very finely sliced
- 1/2 tablespoon of cooking oil
- handful of baby spinach leaves
Steps:
- Combine all of the salsa ingredients and set aside
- Heat the oven to 160 degrees and add the tortillas wrapped in foil to warm for 10 minutes. Turn off the oven
- Mix the sauce ingredients together and set aside
- Heat a pan and cook the sliced steak for a minute remove from the heat
- To assemble spread the sauce on the tortilla, add the steak and salsa and spinach leaves
- Fold the tortilla to encase the mixture and serve
Hints and Tips:
- Make up tortillas as required and leave those yet to be made covered in the warm oven (turned off)
- If you have some extra time the salsa has a great kick if you make it early and let it marinate with the chilli
