Makes 2, 16 oz. servings
- 3 cups diced cucumber
- ¼ cup raw cashews
- ¼ cup (packed) chopped fresh mint leaves
- 2 cups packed baby spinach
- 1 tablespoon freshly squeezed lemon juice
- 3 cups coconut water ice cubes
- sweetener, to taste (optional)
Blend together all the ingredients, except the coconut ice, until smooth. Add the coconut ice and blend once more. Calorie information: 173 per serving
