Chimichurri sauce is a magical green sauce that’s one of the best ways to instantly brighten a dish with fresh flavor and color. Aside from being totally delicious, it’s healthy, versatile, and super quick to prepare.
Chimichurri Sauce [Vegan]
Ingredients
- 1 cup fresh parsley
- 1 cup fresh cilantro
- 4 cloves of garlic, peeled
- 1 – 2 teaspoon crushed red pepper (adjust to the level of spice you prefer)
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/3 cup red wine vinegar
- 1/4 to 1/2 cup olive oil
Preparation
- Add all ingredients plus 1/4 cup of the olive oil to a food processor fitted with the chopping blade. Blend until smooth, 1-2 minutes. Check the consistency and taste for seasoning. Add as much olive oil as you like to achieve the consistency you want.
