This chickpea lentil salad is perfect to eat if you're looking for a high protein meal!
Chickpea & Lentil Salad [Vegan]
Ingredients
- 2 cans of chickpeas (480g drained)
- 2 cans of green lentils (235g drained)
- 4/5 cups cucumber (cut into small cubes)
- 1 1/3 cups cherry tomatoes (quartered)
- 2 sticks of celery (~70g)
- 4 spring onions (chopped – ~85g)
- Bunch of fresh parsley (chopped)
- Bunch of fresh coriander (chopped)
- 3 tablespoons cumin
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon garlic powder
- Salt & pepper to taste
Optional:
Preparation
- Place all the ingredients in a bowl and mix thoroughly
- Then cover and place in the fridge for at least 30 minutes to infuse
- Split into 3 big portions or 4 smaller portions and pop in the fridge for your lunches or dinners
