The International Agency for Research on Cancer (the cancer branch of the World Health Organization) captured headlines around the globe last week. The IARC shocked and dismayed carnivores with their announcement that processed meat has been classified as a Group 1 carcinogen (carcinogenic to humans).
Group 1 is the same rating that applies to asbestos, smoking tobacco, and ultraviolet radiation. It is given when a substance has demonstrated sufficient evidence of causing cancer in humans.
The experts concluded that each 50 gram portion of processedmeat eaten daily increases the risk of colorectal cancer by 18%. It is also linked with pancreatic cancer and prostate cancer.
In the same report, the IARC also classified red meat as probablycarcinogenic to humans (Group 2A). This rating is based on "limited evidence that the consumption of red meat causes cancer in humans and strong mechanistic evidence supporting a carcinogenic effect."
According to the IARC, processed meat refers to "meat that has been transformed through salting, curing, fermentation, smoking, or other processes to enhance flavour or improve preservation."
Red meat is defined as as "all types of mammalian muscle meat, such as beef, veal, pork, lamb, mutton, horse, and goat."
