These breakfast jars are a great way to beat the heat, layered with chia pudding, puffed
millet, and strawberry nice cream.
Pink Layered Breakfast Jars [Vegan]
Ingredients
Chia pudding
- 4 tablespoons chia seeds
- 1 cup plant-based milk
- 1 tablespoon maple syrup or sweetener of choice
- 1/2 teaspoon pitaya powder optional, for color
Smoothie / nice cream
- 2 frozen bananas
- 1 cup frozen strawberries
- 1/2 cup puffed millet optional, or puffed grains of choice
Preparation
- In a jar/bowl, mix together the chia pudding ingredients and let set in the fridge for at least 2 hours. Mix after the first hour to ensure that the liquid gets absorbed well.
- If you want to add some color, transfer half of the chia pudding to another jar and mix in pitaya powder.
- When ready to eat, blend the bananas and strawberries in a blender/food processor, adding a splash of liquid if needed.
- Once the nice cream is smooth and creamy, start layering your jars if you want. From bottom to top, layer the chia pudding mixtures, then puffed millet, then nice cream.
