Pasta Puttanesca [Vegan]
Ingredients
- 1 pound linguini
- 1 tomato chopped
- 7 ounces tomato juice
- 5 cloves garlic
- 1/2 cup olives, sliced
- 3 tablespoons capers,
- 4 tablespoons olive oil
- 5 sprigs of fresh oregano
- salt and pepper
Preparation
- Put the two kinds of tomatoes in the pot, the garlic and the oregano and let them boil over medium heat.
- In the meantime boil the pasta according to the packaging instructions. When the sauce has thickened, add the oil, olives and capers and allow to boil. Salt and pepper.
- Strain the linguini and toss it in the saucepan with the sauce. Stir to cover. Serve immediately.
