Espresso Truffles [Vegan]
Ingredients
- 1 small avocado (mashed)
- 7 ounces of vegan dark chocolate
- 2 teaspoons of espresso powder
- 1/4 teaspoon of vanilla extract
- 1 tablespoon unsweetened cocoa powder (separated)
Preparation
- In a small bowl, mash the avocado until smooth. Melt the chocolate in either the microwave or on the stove, taking care not to burn it. Once melted, stir in the rest of the ingredients and add to the mashed avocado.
- Place the truffle mixture into the fridge for 30-40 minutes and let cool. Use a small ice cream scooper to dollop out the truffles and form balls with your hands. Roll in 1 tablespoon of cocoa powder.
- Store in a sealed container in the fridge.
