While the citrus elevates the cashews in this dressing, the cashews are actually the rock stars since they replace oil and give the dressing a creamy mouthfeel. This healthy, oil-free salad dressing is a show-stopper on top of salads, steamed veggies, grain bowls, in tacos, or on top of sweet potatoes. Make extra, so you can enjoy it all week!
Creamy Citrus Dressing

½ cup cashews (soaked in water for 4–6 hours)

1 medium lemon (juiced)
1 tbsp organic apple cider vinegar
1 tbsp tahini
1 shallot (chopped)
salt (optional)
pepper (optional)
Directions
1
Place all ingredients in a food processor or small blender and blend until smooth.
2
Adjust flavors with extra orange juice, lemon, or salt and pepper if desired.
Chef's Notes
Substitutions
Navel oranges are in season, but if you can’t find them any juicy oranges will do!
Use green or yellow onion in place of the shallot.
Use extra orange juice in place of the lemon.
Prep Ahead
Make it ahead of time! Cream Citrus Dressing will keep for 5 to 7 days in a well-sealed container in the refrigerator.
