Green Goddess oil-free dressing is bursting with flavor and so versatile! Use it as a salad dressing, on top of a grain bowl, or as a healthy sauce for grilled tofu or tempeh. Tahini is the magical ingredient that replaces the oil. If you haven’t yet experimented with tahini, now’s the time to try it, friends.
Green Goddess Dressing
Ingredients
¼ cup tahini
5 tbsp water
1 medium lemon (juiced)
1 tbsp apple cider vinegar
1 tbsp pure maple syrup
1 clove garlic (chopped)
1 stalk green onion (chopped, including the white and green portions)
½ cup cilantro (chopped)
Directions

Add all ingredients to a blender or food processor and blend until creamy. Add more water, 1 tablespoon at a time, if needed for desired consistency.
Chef's Notes
Substitutions
Try ¼ cup basil and ¼ cup cilantro for variety.
Don’t like cilantro? Use ½ cup basil.
Prep Ahead
Make it ahead of time! Green Goddess Dressing will keep for 5 to 7 days in a well-sealed container in the refrigerator.
Sugar-free
Use orange juice or pineapple juice for maple free, or simply try omitting the maple.
Salt and pepper really aren’t needed here, but add a sprinkle if you’d like.
Make it spicy and more nutritious
Add 1–2 tablespoons of chopped jalapeno.
Blend in 1” piece of ginger.
