Ingredients
Batter:
- 1/2 cup freshly squeezed orange juice
- 1/2 cup coconut milk
- 1/2 cup almond flour
- 1/2 cup gluten-free all purpose flour
- 1 tablespoon chia seeds
- 1 tablespoon melted coconut oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon vanilla bean powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- handful of raspberries
- handful of blueberries
- handful of mint leaves
- 2 kumquats cubed
Matcha dressing:
- 1/4 cup plant based yogurt
- 2 tablespoon lucuma powder
- 1 tablespoon maca powder
- 1 tablespoon matcha tea powder
- 1/4 teaspoon vanilla bean powder
Strawberry jam:
- 1 cup strawberries
- 2 passion fruits
- 1 tablespoon maple syrup
- 2 tablespoon chia seeds
- 1/4 teaspoon vanilla bean powder
Preparation
Batter:
- Mix everything together and let rest at least 10 minutes. After that, pan fry in coconut oil on both sides.
Matcha dressing:
- Mix everything together.
Strawberry jam:
- Mix all together and let set for half an hour.
Notes
This pancake batter allows you to decide whether to make thick and fluffy or thin and more crispy pancakes. Just add liquids if you prefer thinner ones.
