For Lent or for Summer, you can prepare recipes with seafood that are cheap and
delicious, like these Fish Quesadillas in a habanero sauce (suitable for lovers of hot sauces). This recipe for a Mexican appetizer is made with Tilapia or if you prefer, you can substitute with dogfish, it is only important that when you form the quesadillas, the tortillas are hot so they do not break apart.FISH QUESADILLAS IN HABANERO SAUCE
Ingredients
4 Portions
- 1/4 cups onion, finely chopped
- 1 tablespoon garlic, finely chopped
- 1 cup tomtato, cut into cubes
- 500 grams tilapia fillet, cut into cubes
- 2 serrano peppers, finely chopped
- 2 branches epazote
- 12 corn tortillas, hot
- enough vegetal oil, to fry
- 4 tomatoes
- 2 habanero peppers, for the sauce
- 1/4 onions, for the sauce
- 1 clove garlic, for the sauce
- 2 cups shrimp broth, for the sauce
- 1 branch epazote, for the sauce
- enough red onion, to decorate
- enough avocado, to decorate
Preparation
In a pan over medium heat heat the oil, sauté the onion with the garlic, add the tomato, the tilapia, the chile serrano, the epazote and cook for 5 minutes. Let cool and reserve.
On a table, fill the corn tortillas with the previous preparation. Close and with the help of toothpicks, secure the edges.
In a saucepan over medium heat heat enough oil, fry the quesadillas until golden brown. Drain on absorbent paper and reserve.
In a pot over medium heat, heat a tablespoon of oil and fry the tomatoes, habanero pepper, onion and garlic until softened. Fill with the fish stock and cook until only half remains.
Blend the previous preparation until obtaining a homogeneous sauce.
Cook the sauce again with a little more oil and season with salt and pepper, cook for 5 minutes or until thick.
On a plate place the quesadillas, pour the habanero sauce decorated with avocado and purple onions.
