
Believe it or not, one of the best ways to eat vegetables is to prepare them stuffed with something. For example, these Chayotes Stuffed with Salpicón, a light and healthy dish. This is not only a low calorie recipe, it is also very economical and rewarding. Also, a portion of these Stuffed Chayotes Squash has only 296.2 calories.
CHAYOTES SAQUASH WITH SHREDDED BEEF SALAD
Ingredients
4 Portions
- enough Water
- 1 tablespoon salt
- 2 chayote squash , peeled and cut in half
- 1 1/2 cups flank steak, cooked and shredded
- 1/4 cups red onion, finely chopped
- 2 green tomatoes, in cubes
- 2 pickled serrano peppers, cut into slices
- 1 cup lettuce, finely chopped
- 1 tablespoon oregano, dry
- 1/4 cups lemon juice
- 4 tablespoons olive oil
- 1 tablespoon white vinegar
- enough salt
- enough black pepper
- 1/2 avocados, in slices
Preparation
In a pot with boiling water and salt, cook the chayotes squash until they are soft, about 15 minutes. Remove, drain and reserve.
In a table and with a spoon, hollow out the chayote squash and finely chop the filling.
For the salpicón, in a bowl mix the shredded meat with the purple onion, the green tomato, the chile serrano, the lettuce, the cilantro, the oregano, the lemon juice, the olive oil, the vinegar, the stuffing for the chayote, salt and the pepper.
Fill the chayotes squash with the salpicón and decorate with avocado.
