With all the sweet potatoes that are going to be on our grocery lists this season, we want to include them in as many meals as possible - including breakfast! These sweet potato waffles will allow you to enjoy this awesome ingredient like never before.
Sweet Potato Waffles [Vegan]
Ingredients
- 2 medium sweet potatoes (weighing ~ 3/4 pound)
- 2 tablespoons almond milk (or other dairy free milk)
- 1 1/2 cups chickpea flour (or normal flour)
- 1 tablespoon Mixed herbs
- 1 tablespoon Garlic powder
- 1 teaspoon Onion powder
- Black pepper to taste
Preparation
- Peel the potatoes and cut into small cubes and boil for ~20 minutes until soft
- Transfer the potatoes to a mixing bowl and mash, then add the plant-based milk and mix (herbs and salt/pepper can also be added at this point)
- Bit by bit add the flour and make sure you mix it thoroughly
- Pre-heat your waffle iron and spray with a non-stick spray (this recipe used coconut spray)
- Add the mixture to your iron until golden, should take about 2-3 minutes (but will vary)
- Enjoy!
