HARISSA TOFU SCRAMBLE [VEGAN]
INGREDIENTS
- 2 tablespoons olive oil
- 1 red bell pepper, chopped
- 1/2 cup tomatoes, cubed
- 1-2 cloves garlic, minced
- 1/4 cup tomato paste
- 3 tablespoons harissa
- 8 ounces extra firm tofu, crumbled
- 1 teaspoon cumin powder
- Salt and pepper, to taste
PREPARATION
- Put the olive oil, red pepper, tomatoes, and garlic in a skillet over medium heat. Stir and cook for 2 minutes.
- Add the rest of the ingredients, and cook, stirring constantly, for another 5-6 minutes, until the tofu is flavorful. Serve hot.
