Butternut Squash Turmeric Latte [Vegan, Grain-Free]
Ingredients
- 1 can coconut milk
- 1/2 cup steamed butternut squash
- 1/4 teaspoon turmeric
- 1/4 teaspoon maple butter or maple syrup (optional)
- 1 teaspoon pumpkin pie spice
- 1/4 cup cold brew coffee or espresso (optional)
Preparation
- Steam butternut squash until tender.
- Transfer the hot squash to a high-power blender along with the rest of the ingredients.
- Blend on high for about 2 minutes (this will ensure that there are no chunks to settle at the bottom and will also help heat it through).
