Korean style grilled steak tacos with a fresh pineapple, lettuce, cucumbers, green onions
and a tasty pineapple gochujang salsa!
Korean Grilled Steak Tacos with Pineapple Gochujang Salsa
ingredients
- 2 cups pineapple
- 2 tablespoons gochujang
- 1 small onion, quartered
- 1 teaspoon garlic, minced/grated
- 1 teaspoon ginger, minced/grated
- 1 lime, juice and zest
- 2 tablespoons cilantro
- 1 tablespoon toasted sesame seeds
- 1 teaspoon toasted sesame oil
- salt to taste
- 12 small corn tortillas, warmed
- 1 pound Korean grilled flank steak, thinly sliced, warmed
- 2 cups pineapple, optionally grilled and sliced
- 2 cups lettuce, shredded
- 1 cup cucumber, sliced
- 2 green onions, sliced

- Puree everything in a food processor.
- Assemble the tacos and enjoy!

Option: Grill the pineapple and onion before slicing and pureeing into the salsa!
Note: Gochujang is a Korean style fermented red chili paste that you should be able to find in the Asian section of a grocery store or in an Asian grocery store.
Tip: Start with a small amount of gochujang and add more slowly to get the salsa to the desired level of heat.
Option: Use carne asada instead of the Korean style steak.
Option: Add kimchi to the tacos!
Option: Add cheese like queso fresco, feta, etc.
