This Focaccia is topped with cherry tomatoes, corn, paprika, coarse salt, and aromatic
herbs. If you don't know, focaccia is a type of flat Italian oven-baked bread, usually made with olive oil, herbs, and spices. Making focaccia is almost no different to making any other bread, but you add some olive oil to the dough and the toppings of your choice on top.
Focaccia With Fresh Herbs [Vegan]
Ingredients
- 1 cup lukewarm water
- 2 teaspoons sugar
- 5 g dry yeast
- 14 ounces flour
- 2 ounces olive oil
- 2 teaspoons salt
Preparation
- Add sugar and dry yeast to luke-warm water. Mix well to combine and let rest for 10 minutes.
- Once the yeast activates, add it to the flour, then add also olive oil and salt and knead into and elastic dough. Set it aside in a bowl, covered with a kitchen towel and let rest for about an hour, or until the dough doubles in size.
- Prepare a large baking tin, grease with olive oil and dust with flour to prevent the dough from sticking. Dump the dough on your counter and shape into a ball. With your hands, stretch the dough to the baking tin size and place into the baking tin.
- Let rest for another 15 minutes. Preheat oven to 400°F.
- Press the vegetables and herbs into the dough. Sprinkle on top with spices and salt and drizzle with olive oil. Bake for about 15-20 minutes or until the dough turns golden brown.
