This recipe combines the zesty spice of Indian masala with a classic black bean cheeseburger. Add some caramelized onions and freshly baked potato chips and you have an insanely delicious burger! Oh, and don't forget to layer on the melty cheese!
Tandoori Masala Black Bean Cheeseburgers With Caramelized Onions and Chips [Vegan]
Ingredients
For the Patties:
- 2 cups black quinoa, cooked
- 2 cups black beans, cooked
- 1/2 cup grated pumpkin
- 1 cup nuts
- 1/2 cup cup grated zucchini
- 4 cups Crimini mushroom
- 1/2 cup oatmeal
- 1 onion
- 2 garlic cloves
- 3-4 yellow chanterelle
- 1 teaspoon flaxmeal mixed with two teaspoons water
- 1 teaspoon cumin
- 1 teaspoon thyme
- 1/2 teaspoon bay leaf powder
- 1/2 teaspoon onion powder
For the Burgers:
- 2 hamburger buns
- 2 slices vegan cheddar cheese
- 1 onion
- 2 garlic cloves
- olive oil
- 1 teaspoon thyme
- 1 teaspoon tandoori masala
- Salt and pepper
For the Burger Sauce:
- 2 tablespoons soy sauce
- 1 1/2 tablespoons red wine
- 1 tablespoon olive oil
- 1 teaspoon maple syrup
For the Cheese Sauce:
- 4 tablespoons cashew cream cheese (omit garlic and rosemary from recipe)
- 2 teaspoons mustard
- 2 teaspoons lemon juice
- A pinch of paprika
- 2 small potatoes, for chips
Preparation
To Make the Patties:
- Have the quinoa and black beans cooked ahead of time.
- Cook onion in a frying pan, when they start to brown add the garlic cloves and sliced mushrooms. Cook until well done.
- In a bowl, add the oats , beans, mushrooms, and mix.
- Then we add the black quinoa, pumpkin, zucchini, flax with water, yellow chanterelle, nuts, and spices.
- Mix all ingredients by hand.
- When everything is more or less mixed, form thick patties.
- Prepare baking paper and freeze any burgers you're not using immediately.
To Make the Burgers:
- Preheat oven at 356°F.
- Slice the onion, drizzle a bit of oil on the slices, and pop them in the oven.
- Chop the garlic and mix with olive oil, thyme, and tandoori masala.
- After about 15 minutes, take the onion slices out of the oven and with a spoon add the garlic mixture over each slice. Then bake for an additional 5 minutes. Keep an eye on the garlic and make sure it doesn't burn!
- Then brush the mixture of red wine, oil, soy sauce, maple syrup onto the patties and bake for about 10 minutes per side.
- Peel the potatoes and cut with a mandolin or potato peeler into very thin slices. Place on baking paper and drizzle with olive oil, salt, and pepper.
- Add vegan cheddar cheese onto each burger and leave for a few more minutes in the oven.
- Prepare the cashew cheese and mix in the paprika, mustard, and lemon juice.
- Open the buns. Place a dollop of cashew cream cheese on the bottom bun, place the patty on top, add the onions, and top with cheese.
