This very Mexican recipe of pork tenderloin in a delicious and traditional marinade, sauce based on guajillo chiles and wide in which the meat is cooked and it will leave it super juicy and with a great flavor. Do not stop trying it.
MARINATED LOIN
Ingredients

- 1 pork tenderloin, (1.5 kg)
- 1 tablespoon salt
- 10 guajillo chilies, deveined and seedless
- 5 ancho chili peppers, deveined and seedless
- 2 cloves garlic, without shell
- 1 tablespoon oregano
- 2 tablespoons raw sugar
- 1 twig cinnamon
- 6 whole black peppers
- 1/2 cups apple vinegar
- 1/2 cups Water
- 1 tablespoon salt
Preparation
Preheat the oven to 180 °.
Tie the back with the hemp thread and season it.
Blend the chilies, garlic, oregano, mashed sugar, cinnamon, pepper, vinegar and water.
Add the grind to the loin and marina 1 hour.
Season and put in the oven and bake for 2.5 hours covering the mold with aluminum foil.
