Tiramisu


This Vegan Tiramisu has fluffy layers consisting of a homemade sponge cake and 

a soft cream made from vegan yogurt and tofu: it’s simple and it’s delicious! It is served cold and it is adored for its creaminess and bitter sweet taste. The perfect mixture of contrasting flavors in each layer makes this dessert a true delight. Throughout centuries, Tiramisu has been changed and interpreted in many different ways – and this version is completely cheese-free, nut-free and egg-free.

Tiramisu [Vegan]

Ingredients

For the Tiramisu:

  • 8 1/2 ounces coffee (black)
  • 1 ounce cacao powder

For the Vegan Mascarpone Cream:

  • 14 ounces unsweetened soy yogurt
  • 7 ounces silken tofu (soft)
  • 3 1/2 ounces vegan butter
  • 3 1/2 ounces sugar
  • 1 3/4 ounces soy milk

For the Vegan Sponge Cake:

  • 7 ounces all-purpose flour
  • 7 ounces water
  • 6.35 ounces sugar
  • 3 1/2 ounces corn starch
  • 3 1/2 ounces refined coconut oil or vegan butter
  • .56 ounces baking soda
  • 1 whole vanilla bean

Preparation

For the Vegan Mascarpone Cream:

  1. Put the yogurt to drain for at least 8 hours in a sieve wrapped in a cheese cloth with weights on top (better if the night before).
  2. With an immersion blender, emulsify the soy milk with the melted vegetable butter. blend together all the ingredients for the mascarpone cream (dried yoghurt, tofu, butter and milk emulsion, and sugar). If you use whole-wheat sugar, blend it first separately.

For the Vegan Sponge Cake:

  1. In a bowl, mix water, refined coconut oil, vanilla and sugar. pass the all-purpose flour, cornstarch and baking powder through a sieve and add them to the liquid mixture, stirring with a spatula until the mixture is smooth.
  2. Bake in the oven for about 30 / 40 minutes at 360˚F.

To Assemble the Tiramisu:

  1. Arrange in a small glass or in a glass baking tray.
  2. Repeat layers of sponge cake soaked in sweetened coffee with a topping of vegan mascarpone cream, finalize with cacao powder
  3. Store the tiramisu in the refrigerator for a couple of hours before consuming it, this makes the flavor more intense.
