MIX BERRIES SALAD WITH ROSEMARY VINAIGRETTE
Ingredients

- 1/3 cups balsamic vinegar, for the vinaigrette
- 1 tablespoon Dijon mustard, for the vinaigrette
- 1 tablespoon rosemary, for the vinaigrette
- 1 tablespoon Water, for the vinaigrette
- 1 tablespoon lemon juice, for the vinaigrette
- to taste salt and pepper, thick, for the vinaigrette
- 3/4 cups Oli de Nutrioli® Extra virgin Olive Oil, for the vinaigrette
- 1 cup goat cheese
- 1/4 cups Serrano ham, finely chopped
- 1 teaspoon old mustard
- 3 tablespoons cranberry
- 1 cup caramelized walnut, finely chopped
- 2 cups Re Lettuce, chopped, washed and disinfected
- 2 cups french lettuce, chopped, washed and disinfected
- 1 cup arugula, chopped, washed and disinfected
- 1/4 cups raspberry
- 1/4 cups blueberry
- 1/4 cups blackberry
Preparation
For the vinaigrette, blend the balsamic vinegar, mustard, rosemary, water, lemon juice, salt, pepper. Continuing to blend, add Oli de Nutrioli® extra virgin olive oil little by little and continue blending until emulsified.
In a bowl, mix the goat cheese, the serrano ham, the old style mustard and the blueberries.Form balls and mix in the caramelized nuts.
In a salad bowl, gently mix the lettuce with arugula, raspberries, blackberries, blueberries and goat cheese balls.
Serve the salad with the vinaigrette.
