FRUITY DESSERT SUSHI WITH CINNAMON VANILLA 'RICE' [VEGAN, RAW]
INGREDIENTS
- 2 ripe bananas
- 1 cup raw Brazil nuts
- 1/2 cup shredded coconut
- 1 lime juiced
- 1 tsp vanilla extract
- Pinch of cinnamon
- 1 nori seaweed leave
- 1 kiwi
- 1 mango
- 2 strawberries
- 1/3 cup blackberries
- 1/3 cup raspberries
- 1/4 cup coconut meat
PREPARATION
- Blend the banana, nuts, shredded coconut, lime juice, vanilla, and cinnamon in a blender until combined. This is your “sushi rice.” Chill the mixture in refrigerator for 20-30 minutes.
- Remove the “sushi rice” from the refrigerator and, with your hands, shape it into the desired shapes.
- Cut the nori into strips, then, with damp hands, moisten the nori. Wrap it around the sushi rice.
- Slice the fruit and arrange it on top of the dessert sushi to your liking.
