CHILAQUILES IN THREE SAUCES

Preheat the oven to 180 ° C. (266°F)
For the red sauce, heat a deep skillet over medium heat with the oil and cook the garlic with the onion, the guajillo chile, the chile de árbol and the tomato until they are soft.
Add the chicken broth, boil and let reduce by half, season with salt, remove from heat and blend until you get a smooth sauce, strain and set aside.
For the green sauce, heat a pot over medium heat with the water, cook the tomatillos or green tomatoes, the chile serrano, the white onion, the garlic and half the cilantro until the tomatoes change color. Drain and blend with the rest of the cilantro and salt until you get a smooth sauce.
Heat a pot over medium heat with oil and fry the sauce until it reduces and thickens slightly, season and set aside.
Place the tortilla chips in a oven proof dish, sauté half with green sauce, and the other half with red sauce, place chicken, cream, and cheese in the middle forming the flag, and bake until the cheese is au gratin.
Remove from the oven, garnish with cilantro, avocado, onion rings, and chorizo sausage. Serve with beans.
