This coffee pudding is an easy and delicious breakfast that will kickstart your day!
Almond Coffee Pudding [Vegan]
Ingredients
- 1 cup Blanched whole almonds soaked overnight
- 1 cup Water
- 1 cup Almond milk
- 1 teaspoon Vanilla extract
- 1/4 cup Regular coffee
- 1/2 cup Dates, pitted (soaked overnight in water)
- Chia seeds soaked overnight with almond milk, set aside, for garnish
Preparation
- Drain the water from the almonds. Discard water.
- Drain dates until dry. Discard water.
- Add almonds, dates, almond milk and water into a blender. Puree, starting off low and increasing speed. While mixing, add the coffee, and vanilla extract and puree until smooth.
- Chill on an ice bath until cold.
- In a bowl, add the amount of pudding you desire and garnish with chia seeds and vegan granola.
