This quinoa and panela cheese salad is delicious for any occasion, as well as being a very complete and simple meal. Prepare it a day early and take it to work without problems.
QUINOA AND PANELA CHEESE SALAD (TO TAKE AWAY)
Ingredients
2 Portions
1/4 cups olive oil, (for the vinaigrette)
2 tablespoons white vinegar, (for the vinaigrette)
1 clove garlic, finely chopped (for the vinaigrette)
1 pinch salt, (for the vinaigrette)
1 pinch black pepper, (for the vinaigrette)
1/4 cups red onion, in cubes
1/2 cups panela cheese, in cubes
1/2 cups cucumber, in cubes
1/4 cups palmetto, in a slice
1/2 cups quinoa, Cooked
2 tablespoons sunflower seed
1 cup lettuce, chopped
Preparation
For the vinaigrette, mix all the ingredients directly in a glass jar with a lid. Reservation.
Place the purple onion, cheese, cucumbers, palm hearts, quinoa, sunflower seeds in the jar and finish with the lettuce.
